A commercial kitchen combines heat open flames, combustible oils, and a multitude of other hazards, all of which create a serious fire hazard. Fryers, gas ranges, and other cooking equipment co-exist in a high-activity environment which presents a risk of fire. Restaurant Hood Suppression Systems

Restaurant hood fire suppression systems are the perfect solution for commercial kitchens because they respond automatically. These systems also come equipped with a manual pull station that can be activated by kitchen personnel. They utilize a wet chemical agent that provides a blanket over the fire, extinguishing it and preventing reflash. Nozzles and fusible links are placed directly above cooking equipment, extinguishing the fire quickly and efficiently. Restaurant hood suppression systems are required by code to be installed in all commercial kitchens, as well as semi-annual inspections. 

Fire Extinguishers

In addition to restaurant hood suppression systems, all commercial buildings must have portable fire extinguishers. While a kitchen is the most likely place for a fire to start, it’s not the only place. Having portable extinguishers to extinguish fires outside of the kitchen, or to put out a fire that is threatening to spread, isn’t just a good idea—it’s required by code.

Class-K Fire Extinguisher

Not all portable fire extinguishers are the same, and the one required for commercial kitchens is highly specialized to handle cooking fires. These kitchens often have fats, oils, and grease exposed to high heat. These substances are the perfect fuel for a fire. Due to these specific circumstances, a Class-K fire extinguisher is required. Class-K fire extinguishers utilize the same extinguishing agents as hood suppression systems, making them ideal for kitchen fires.
